Fruity profiles run across beverages, dairy, confectionery, bakery, supplements and frozen desserts in Canada. Each matrix calls for its own carrier and dosage — 0.05–0.15% in sparkling water, 0.1–0.3% in yogurt, up to 0.5% in a fruit-forward gummy. We supply water- and oil-soluble versions, juice concentrates and WONF natural systems depending on the regulatory and sensory target.

Stability in low-pH beverage matrices

Most Canadian fruit beverages sit at pH 2.8–3.8 — a range that magnifies certain fruit notes (citrus, berry) and degrades others (banana, peach, melon). Our beverage-grade fruity systems are stability-tested across the relevant pH window, with antioxidants and protective carriers so the fruit reads juicy and fresh through the full 12–18 month shelf life.

Co-formulation with juice, purée and concentrate

A lot of Canadian fruit beverages run a small percentage of real juice or purée plus a natural flavour to round and amplify the profile. We engineer the flavour specifically to lift the juice character that survives processing (and replace what doesn't), rather than competing with it. This consistently delivers a fresher, more authentic perception at lower juice loadings, protecting cost without sacrificing label.

Fruity flavours in confectionery and gummies

Confectionery and pectin/gelatin gummies need higher dosing (0.3–0.7 %), heat stability through cook-up, and a fast top-note release on chew. Our confectionery-grade fruity systems are tuned for that release profile and tested in standard gummy, hard-boiled, fondant and pectin pastille bases.

Sugar-reduced and sugar-free gummy versions are supported with masking pairings for stevia, allulose, erythritol and monk fruit blends.
