Cold mutes flavour — formulate for that

Frozen products are eaten below the temperature at which most aroma compounds volatilise, and fat, air and ice crystals all slow release. The same vanilla that reads generous in a warm custard can read thin at −14 °C, so frozen dessert profiles are built with a stronger, rounder body and a longer finish than a comparable ambient product.

Overrun matters as much as recipe. A high-overrun soft serve carries flavour differently than a dense gelato, and we dose and balance the profile against your actual mix, fat level and overrun rather than against a neutral base.

Dairy-free and reduced-sugar frozen desserts

Oat, coconut, almond and pea-protein frozen desserts each bring their own base note — cereal, coconut fat, nutty bitterness or the green, beany character of pea protein. We mask that base first, then rebuild the creamy, dairy-like mouthfeel that consumers expect before layering the fruit or dessert profile.

Reduced-sugar frozen products lose sweetness, body and freeze-point control at once. Our modulation systems push perceived sweetness forward and cover the lingering bitterness of stevia, monk fruit or allulose blends so the reformulated SKU stands up next to the full-sugar reference.

Frequently asked questions

Why does my ice cream taste weaker than the bench sample?

Temperature, fat and overrun all suppress aroma release. The dose that works in a warm mix is usually too low once frozen and aerated — we adjust the profile against your finished product, not the mix.

Do you have flavours for oat and coconut frozen desserts?

Yes — masking for the plant base plus creamy dairy-style mouthfeel systems, then the fruit or dessert profile on top.

How many vanilla options can you send?

We usually submit two to four vanilla directions in one shipment so your team can screen them in your own mix in a single session.

What is the minimum production order?

Production starts from a 5 kg minimum, with samples of 100–500 g for bench and pilot trials.
