Why hard seltzer needs its own flavour system

Hard seltzer is built on a deceptively hard brief: 90 calories or less, no sugar, 4–7 % ABV, totally clear in the can, with a clean ethanol top note and fruit character that reads true rather than candy-like. The classic emulsion flavour systems that work in soft drinks turn the liquid cloudy; sugary fruit syrups don't fit the calorie window; and ethanol amplifies anything off-note in the base.
