Flavour Dosage Rates: A Practical Guide for Food and Beverage Formulators

Typical usage rates by category, why the same flavour needs a different dose in water than in a protein shake, and how to test dosage properly at bench scale.

Dosage is a range, not a number

Every flavour carries a recommended usage rate, usually expressed as a percentage of the finished product or in grams per litre. That figure is a starting point measured in a neutral base — it is not the dose your product will end up using.

As a rough orientation, water-based beverages typically sit between 0.05% and 0.3%, dairy and frozen desserts between 0.1% and 0.5%, bakery between 0.1% and 1%, savoury sauces and snack seasonings higher again, and vape and e-liquid systems commonly between 2% and 10%. What pushes the dose up or down

Fat is the single biggest variable. Fat binds and slowly releases aroma compounds, so a full-fat ice cream can need noticeably more flavour than a sorbet to read the same intensity. Protein behaves similarly and adds off-notes that have to be masked before the profile is judged.

Sweetness, acidity and carbonation all shift perception too. High-intensity sweeteners lengthen sweetness and can flatten fruit top notes; low pH sharpens citrus; carbonation lifts volatiles and often lets you dose slightly lower. Heat and shear work the other way — hot-fill, UHT, retort, baking and extrusion all cost you top notes, so the dose or the delivery system has to compensate.

How to run a bench dosage trial

Test in your real base, never in water. Prepare at least three levels — the recommended rate, roughly half of it and roughly double — in your actual formula, processed the way the line will process it. Evaluate at room temperature and at serving temperature, and again after a few days, because perceived balance moves as the product equilibrates.

Record the dose as cost-in-use, not just as a percentage. A flavour that works at 0.08% can be cheaper per finished litre than one that costs less per kilo but needs 0.25%. Bring those numbers to your supplier — they are the fastest way to a decision.
