Heat-Stable Flavours: Surviving Baking, Extrusion and Retort

Why the same flavour that tastes perfect in the mixing bowl disappears in the oven, and how encapsulation, dosage and addition point keep the profile in the finished product.

What heat actually removes

Heat does not weaken a flavour evenly — it removes the lightest parts first. Esters and small aldehydes that carry fresh fruit and citrus lift are the first to go, followed by the mid notes. Heavier vanilla, caramel, cocoa, spice and roasted components survive far better, which is why baked goods drift towards those profiles unless you intervene.

That is why a dough or batter that smelled ideal before baking can come out flat: the profile that evaporated was the top of it. The fix is not simply more flavour, because over-dosing the whole system pushes the surviving heavy notes out of balance.

Encapsulation, addition point and dosage for cook loss

Three levers matter. Encapsulation protects volatiles inside a carrier that only releases at a chosen point — useful in extrusion, where barrel temperature and shear are extreme, and in baking, where surface loss is high. Addition point matters just as much: moving flavour from the dough into a filling, glaze, icing or post-bake spray keeps the delicate part out of the oven entirely.

Dosage is the third lever, but as a deliberate overage for a measured loss rather than a guess. We build the profile with a heavier top-note load so that what remains after the process is the balance you approved, then validate it on your own line temperature and dwell time.

Process-matched sampling beats bench approval

Approving a flavour in an unbaked batter, an unextruded pre-mix or an unretorted sauce is the most expensive mistake in this category, because the profile you sign off on is not the profile the consumer buys. Always evaluate after the real process, at the real dwell time, in the real package.

For retort and canning, add a second check after several weeks: retort continues to develop cooked and sulphurous notes during storage, and a profile that passed on day one can shift by month three. Accelerated stability alongside a real-time set is the practical way to catch that before launch.

How should we sample for an extruded product?
