Berry profiles

Each berry profile carries multiple character variants. Strawberry alone covers garden, wild, jammy, ripe-red and green-fresh expressions; blueberry covers wild lowbush, cultivated highbush and jammy-cooked. Cranberry and saskatoon — Canadian native profiles — are stocked given strong domestic demand.

Berry profiles work brilliantly across dairy (yogurts, ice cream), beverages (juices, RTD teas, kombucha), supplements (gummies, protein), confectionery and bakery applications.

Colour and stability

Berry flavours are commonly paired with anthocyanin-based natural colours; we can co-recommend pH-stable colour partners from our network to maintain visual identity across shelf-life.

Application matrix and dosing

Berry profiles work across dairy (yogurt, ice cream, smoothies), beverages (juices, sparkling waters, RTD teas, kombucha), supplements (gummies, protein), confectionery, bakery and frozen desserts. Each matrix changes how the berry reads — sugar level, fat content, acidity and processing all shift perception. We tune dosage and architecture per application, from 0.05% in a beverage up to 0.5% in a baked good.

We supply water- and oil-soluble systems plus juice concentrates and natural distillates depending on the regulatory and sensory target.

Anthocyanin interaction and colour drift

Berry flavours often ride alongside natural berry colour (anthocyanins). Both are sensitive to pH, light, metals and ascorbic acid, and they drift together: as the colour fades pink-grey, the flavour reads flat and "old". We tune the flavour to keep the fresh-fruit top note alive even as natural colour shifts, and recommend complementary anthocyanin-stable colour systems when needed.

WONF, natural and natural-with-juice options

Berry profiles are available as fully natural, WONF (with other natural flavours), natural-with-juice and conventional. Each carries different label implications under CFIA: "natural strawberry flavour", "natural flavour (contains strawberry)", or "strawberry juice and natural flavour". Choice depends on cost target, juice content, and front-of-pack positioning.

We routinely supply Canadian customers with all four positioning tiers of the same strawberry, raspberry, blueberry and saskatoon profile so brand teams can A/B price-versus-claim before locking the SKU.
