Delsa — Derivados Esenciales del Limón S.A. — was founded on citrus. Lemon, lime and orange essential oils, distillates and reconstituted flavours have been our R&D backbone for over 30 years. That heritage now reaches Canadian customers through our Canadian office, with the same Spanish R&D centre behind every sample.

We carry single-fold, 5-fold, 10-fold and washed/terpeneless variants for stability in beverages and confectionery, plus citrus distillates and aqueous phases for clean, natural mouthwatering top notes.

Stability and shelf-life behaviour

Citrus top notes are notoriously fragile — d-limonene oxidizes, aldehydes evaporate and the bright, juicy character can fade fast in light, oxygen and heat. Our citrus systems combine encapsulation, antioxidants and stability-tuned carriers so the final product still reads bright and natural at 12 months on shelf, not just on day one.

We provide accelerated stability data for can, PET, glass and pouch formats, and adjust the system for cold-fill, hot-fill and UHT processes.

Winterized, terpeneless and folded variants

Standard cold-pressed citrus oils contain 90–95 % terpenes — great for aroma, terrible for cloud, stability and clarity in clear beverages. Winterized and terpeneless oils strip the limonene and pinene fractions, leaving the high-impact oxygenated compounds (citral, linalool, decanal) that drive the bright citrus signal. 5-fold and 10-fold versions concentrate impact further so dosage drops to 0.02–0.05 % in finished beverage.

Regulatory positioning of citrus oils in Canada

Under CFIA labelling, expressed citrus oils, distillates, washed oils and reconstituted citrus systems each carry different declaration options — "natural lemon flavour", "natural flavour", "lemon oil", or "flavour". The right choice depends on the source, processing and end-product positioning. We provide the technical and regulatory dossier with every citrus sample so your labelling team can make the call confidently.

All citrus shipments include CoA, allergen statement, kosher/halal certificates where applicable, GMO and irradiation status.

What's the difference between distilled and expressed citrus?

Expressed oils come directly from cold-pressing the peel and carry full citrus character but contain photosensitive compounds. Distilled oils are vacuum-distilled for stability in clear beverages and longer shelf-life.
