Confectionery Flavours for Canadian Candy & Chocolate Makers

Fruit, sour, mint, caramel, vanilla and chocolate flavours for hard candy, gummies, chewing gum, chocolate fillings, fondants and pressed mints — supplied to Canadian confectioners by Delsa Flavours Canada, the Canadian office of Delsa.

Flavours built for each confectionery process

Hard candy is cooked well above 140 °C, so light fruit top notes flash off before the mass is formed. We supply profiles loaded for that loss, or versions intended for addition on the cooling table where the process allows it.

Chocolate and compound coatings are fat-based and intolerant of water, so we supply oil-soluble or powder flavours that will not seize the mass. Fondants, fillings and caramels need profiles that stay balanced against high sugar levels and browning notes.

Sour, mint and sugar-reduced candy

Sour sanding and acid-coated candy need fruit profiles that stay recognisable next to citric and malic acid. Mint and menthol systems for gum and pressed mints are balanced for cooling intensity, sweetness and length.

Sugar-free and reduced-sugar candy using polyols or high-intensity sweeteners often shows a cooling or lingering sweet note. Our flavour modulation work helps round out those formulations before the main flavour is judged.

Documentation and ordering in Canada

We supply specification sheets, allergen statements and certificates of analysis in English and French to support Canadian labelling, with kosher, halal and natural documentation where the profile qualifies.

Delsa is a global flavour company from Spain with 30 years of history and a catalogue of more than 5,000 flavours. Our Canadian office handles sampling, technical support and orders locally, with production starting from a 5 kg minimum.
